Bringing fresh olive oil from Umbria to Copenhagen

Imagine the difference between biting into a ripe, juicy fruit straight from the tree versus a processed snack: the freshness, flavor, and nutritional benefits are worlds apart. Fresh olive oil is cold pressed from the finest olives, retaining vibrant flavors, rich aromas, and health benefits. In contrast, conventional oils can be heavily processed, losing their unique characteristics and beneficial properties. Understanding these differences may change how you think about cooking and enjoying food, inviting you to savor the true essence of this remarkable ingredient.

The early harvest

Ooi is pure fresh olive oil from Orvieto in Italy. Olives are grown on noble varieties of olive plants, including Frantoio, Leccino, Moraiolo, Mauritani, and Cilieggiolo. The soil where the trees grow and the location of the olive grove is a south-facing slope, providing ideal conditions for growth. The trees are pruned a few times a year, and the grass is mowed—but pesticides and fertilizers are never applied The early harvest, conducted by a small producer in very limited quantities, takes place in October, using only manual hand-raking to gently collect the fruit. Here olives fall into large nets on the ground and are gathered into sacks and transported to a nearby mill in Umbria. The mill operates using cold pressing, where the ripe olives are grounded with millstones, processed by an advanced knife system, and then centrifuged. The early harvest and pressing result in a higher quality oil and eliminate the need for pesticides, as the olives do not have time to be attacked by insects. We use between 5 to 6 kilos of olives to produce just 0.33 liters of oil, which highlights the remarkable effort and care that goes into each bottle, and what makes ooi an exceptionally high-quality olive oil.

Danish design

Made in Italy – design in Copenhagen. Ooi is a collaboration between a small passionate Danish/Italian producer and the Copenhagen based brand design agency Simply. The visual identity of the sleek and elegant bottle and the name is a complement to the quality of the oil inside. It’s a fusion of Italian craftsmanship and Danish design. Our freshly harvested olive oil is produced and bottled in the heart of Tuscany, a region renowned for its rich agricultural heritage and ideal climate for olive cultivation. The result is a product that not only tastes exceptional but also looks great on any table or kitchen counter.
